Major iOS Upgraded Disaster

I had resisted upgrading my iPhone to iOS 11 until today.
I finally gave in, and updated today only to find out that tens of my apps would not start anymore since iOS 11 would not run any 16 bits apps that I had purchased. I could live with and adapt to the annoyance except that one of the apps I can't access anymore has critically important information that I rely on for major financial matters.
Is there anyway at all to undo a disastrous iOS upgrade?

Based on the answers to similar questions in the Reddit /r/ios group, I think the answer is no.

Apple "signs" each version of iOS. When a new version is released, they continue to sign the old version, but only for a short time, which means users can still downgrade to the old version if they encounter a problem. But once Apple is convinced that the new version is working well enough for most people, they stop signing the old version, and then downgrades are no longer possible.

In this case, since iOS 11 was released almost exactly a year ago, Apple stopped signing versions 10 and earlier a long time ago. And iOS 11 only supports 64-bit apps, the old 32-bit apps no longer work.

In the months just prior to iOS 11 being released, Apple started warning about this. If I recall correctly, when you ran a 32-bit app, it gave a message to the effect that the app would soon stop working.

People usually are quick to complain about Microsoft, but at least they care enough to to permit restoring to a previous to update restore point.
Apple seems to just not give a damn and yet is probably the most popular, not to mention rich company in the world.
I am having more irreversible nightmares with iOS 11 today.

iOS upgrade is a scam.
Whenever I have upgraded, I have ended up having to buy a new iPhone since the one I have becomes unusable. My keyboard has now become so slow that it's not practical to use anymore.

Never had an issue so far, maybe that’s because I don’t have my iPhone full of third party apps.

Not meaning to tell you how to chew gum, but did you not first take a full backup of all important data before you attempted an upgrade?

Did you make sure you could read the important data from the backup, using a different device?

Unfortunately I like to live dangerously when it comes to backups, and this time I ended up paying for it.

I have a backup of the iPhone which is useless since it does not downgrade the iOS and my latest in app backup goes back to 2012.

Well I don't think I deserve all the blame. If you could backup and restore the iOS like any other Operating-System I would be still using my iPhone 4s rather than having forked out $1k which just went down the drain after upgrading to iOS 11. Now I have to see how I'm gonna come up with the $2k needed to get a new iPhone. Unfortunately not having one is out of the question.

ETA Now that I think about it, Apple must have gone really-out-of-their-way to make the iOS not backup-able. It must have been trivial to back up the couple of Gigs of data with the original iOS.

Perhaps the next phone you purchase is an Android (read: Linux) based phone.
