Default Fedora 22 (or, Gnome 3) Annoyances - are there solutions?

I've been running Fedora for a lot of years, but each iteration seems to remove more functionality. Has anyone else noticed, and/or found a solution to the following, most recent changes?:

Nautilus no longer offers the ability to open a file with an alternate program. The only way now, is to change the Open With default.

Example: .html are opened with Firefox. There is no offer of gedit, like there used to be, in case you want to edit the file.

This one isn't new, but nautilus prints its footer message over the filenames on the bottom row of icons and the only way to get it out of the way is to move it over other ones.

gedit no longer offers undo/redo buttons or menu items. CTRL-z/y still work, but no mouse choices are available.

Has anyone found solutions to these failings? I hesitate upgrading to 23 in case even more useful things are now gone...

I almost abandoned Fedora for my workstations because of the stupid GUI decisions in Gnome 3.

I have found that the "Mate Spins" keeps most of the UI functionality I'm used to.

We love Gnome 3.

I dislike the idea of hiding menus behind a click or a mouse movement. It is slow and inefficient use of my time. If I can't see the item I want to click then I might forget it is there. And even if I know what I want I get tired of having to always pull down a covering menu to get to the actual thing I want. If instead there was a line of recognisable icons/text/things I could very quickly get to the thing I want immediately without all the farting about with extra layers of nonsense just to satisfy someone's idea of "clean" GUIs.

That is what I always told her. I have to see it to click it, at least from time to time, otherwise I will forget it is there.

I've used Cinnamon since Ubuntu switched from Gnome 2 (a long time ago, at least by my standards). I've never tried KDE.

Those are the same menus as mine. You have no undo/redo either - my very complaint!

Unless I just can't recognize it, or my screen has filters...
