I prefer the obvious choice 3...cxd4. The other moves give up to much control of the center to suit my taste.

I guess ... but if I'm thinking like myself being white I might do something like capture with the queen or use Ne5 f6 Qh5+ g6 Nxg6 hxg6 Qxh8 and I might even start charging the back rank.

Sure for cxd4, and his only reasonable answer is by the book, Nxd4.
Otherwise, as shown by WMH, we get advantage.
