We played that "instant freeze" demo with soft drinks and any carbonated stuff many times when our little LaurV was in school, as "science experiments", we both liked cold drinks, and use to put the bottles in the freezer, take them out later and open the lid. The evaporation of the carbon dioxide (bubbling), as well as the sharp pressure drop, cools the liquid even more, and you can really see the "instant" part in "instant freezing" (i.e. much faster than in the shown videos).
