They could, but if they ever should, especially while the USD is a reserve/trading currency of choice, I think there would be a few other nations that might have something to say. Not to mention that China would be shooting its own dollar-denominated-debt holding self in the foot as well.

Note that I understand that the USD's days as a currency of choice are perhaps numbered without an expeditious change to the present underpinnings of our economic behavior.

Not only would China devastate its dollar holdings, it would also curtail a great deal of its export trade with the US if the dollar went in the toilet.
