First, yes, I recognize that it's just tv show stuff and not actual science. But the basic idea, in that universe where Star Trek is actually happening, is that you're in a pocket universe being propelled in a "place" next to regular space. Space is moving, rather than light, and you just ride along like in a car. So the pocket universe carries the Enterprise wherever it needs to go via that pocket universe. I know almost nothing about physics, but I seem to remember that space can expand faster than light even if the light contained within it can't move beyond its set speed. And Gene Roddenberry took that idea and ran with it.
